SUMMER COOKING CLASSES
Award winning celebrity Chef Tom Bowles teaches each class . Class size is limited. Minimum 5 students per class, max 10.

The Perfect Steak 7/24 11am-1pm $150 Hands-On, Lunch included
Chef Tom appeared on New Mexico’s Hot Chefs explaining his technique, and now he shares his secrets with you. Tom teaches how to trim a beef tenderloin into filet mignon steaks then guides you through grilling the filets as well as a bone in ribeye steak. Menu also includes grilled corn with chipotle lime butter, roasted garlic mashed potatoes, and learn how to caramelize sugar on crème brulee. Lunch and a glass of wine is included.
Wild Mushrooms 9/18 9am-2pm $300, Hands-on, Lunch Included
This class is completely dependent upon weather, and the availability of the mushrooms in our mountains. The recipes we create will also depend on what we find in the forest. We will depart The Roasted Clove and drive to one of Tom’s favorite mushroom areas, pick wild mushrooms and return to the restaurant to cook and eat. Please wear adequate clothing to hike in the woods.
Knife Skills 6/26, 7/17, 8/21 10am-1pm $130 Hands-On, Lunch Included
Strong culinary skills begin with strong knife skills. This class will teach you the basics of cutting herbs and vegetables. Meal preparation will be faster, easier and more enjoyable when you learn to slice, dice, julienne, and chiffonade like a professional. The Roasted Clove will provide cutting boards but please bring your own chef’s knife. If you require a knife, or would simply like to purchase one, Forschner 10” chef knives will be available for $50 upon request. Please let us know if you would like a knife at the time you register so that we can have one ready for you at class time. Students will help to prepare gazpacho soup, pico de gallo, guacamole, and southwestern shrimp fajitas.
Sauces 8/7 10am-12pm $100
Demonstration, Lunch Included
The right sauce is everything. Chef Tom will introduce you to some basic principles when composing your own sauce. You will learn the ever elusive hollandaise sauce, béarnaise sauce, basil pesto, alfredo, puttanesca, minted pea, and mango black bean salsa. Tom will grill steak, salmon, and chicken to try out the different sauces.
Simple Southwest 8/28 11am-1pm $100 Hands-on, Lunch Included
Chef Tom will concentrate on some light and easy dishes that impress. Ceviche, grilled corn with cilantro lime butter, mahi mahi fish tacos, and rice pudding will tempt your palette.
