Chef
Tom Bowles began his culinary career in his hometown of Denver, Colorado. After
graduating from DePauw University in Greencastle, Indiana, and pursuing a
career in sales, Tom followed his soul and changed careers in 2001. Tom
graduated with a culinary degree from Johnson & Wales University with honors,
then quickly began traveling to see and experience culinary traditions
around the globe.
Tom ventured as far as the South Pole, Antarctica, before visiting New Zealand, Australia, Singapore, Thailand, Italy, Spain, as well as a handful of countries in Central America on his quest for hands-on culinary knowledge. All told, Tom spent 9 months outside the United States broadening his palate.
Upon returning to the U.S., Tom agreed to help a friend from culinary school run a restaurant for the summer. It turns out this restaurant was The Roasted Clove. It didn’t take long for Tom to fall in love with Angel Fire and he soon bought The Roasted Clove.
The contemporary American cuisine at The Roasted Clove is influenced by Chef Tom’s travels around the world. He creatively ties in local and regional ingredients and traditions as much as possible. The result is a diverse appealing menu that is suitable to many tastes. The Roasted Clove also has a well-selected wine list and serves up to ten different draft micro beers.
Chef Tom plans to stay in Angel Fire indefinitely. Tom and his wife Bonnie married in summer 2009, and envision raising their family and dogs Rio and Butler in Angel Fire. Bonnie is an attorney licensed in New Mexico and Texas, and she just opened her solo practice as the only full-time attorney in Angel Fire. Tom and Bonnie enjoy hiking, exploring the mountains surrounding Angel Fire, and great cuisine.
The Roasted Clove is a local’s favorite and a mandatory stop for everyone in the area. In summer 2009, Chef Tom added an outdoor patio just above a babbling creek with views of both Angel Fire Ski Mountain and the stunning sunset. The Roasted Clove even offers a horseshoe pit for casual (and competitive!) dining.
The Roasted Clove is a great place to celebrate a night out to dinner, a wedding anniversary, and birthdays.
